About Basil Doc's Pizza:

Basil Doc's Pizza came to Colorado by way of Pepe's Pizza in New Haven, Connecticut (on the outskirts of the Yale campus). The original Basil Doc's Pizza was opened in the Washington Park neighborhood (2107 East Virginia Avenue: 303-778-7747) in 1996 by Hilary and David Allen who had apprenticed at Pepe's.

In 1999, Mike Miller purchased Basil Doc's from Hilary and David and immediately educated himself on the entire Basil Doc's Pizza operation. Mike is a veteran of the restaurant industry beginning his restaurant career in 1978 after graduating from the University of Denver. After 13 years of restaurant management operations Miller once again graduated from DU (1991) with his MBA.

In July of 2000 a second Basil Doc's was opened in the Crestmoor area of Denver (330 Holly Street: 303-322-5832) which has brought the "THE BEST PIZZAS IN TOWN" (2001 Zagat.com survey) to that neighborhood. In 2004 three neighborhood locations were opened (Virginia Village 1481 S. Holly 303.782.9900, and Highlands 3940 West 32nd Avenue 303.477.5400.)

A local micro business, Basil Docs chose to participate in the Denver Energy Challenge and Xcel Windsource - colorado's source for locally produced wind power and made some energy improvements to streamline their operations!

About Our Process & Ingredients:

  • OUR OVENS - are old school made out of brick ovens, which make the best pizzas, with cooking temperatures being roughly 600 degrees. Leave the cooking to us.
  • OUR DOUGH - made fresh out of four simple ingredients: Flour - premium quality baker's flour milled from cleaned sound hard wheat, Yeast - live, the real stuff, Sea Salt - straight from the source, Filtered Water.
  • GLUTEN FREE CRUSTS - made fresh using simple ingredients: Italian Polenta (no GMO's), Basil, Sea Salt, Water.
  • OUR SAUCE - made fresh out of: California Vine Ripened Tomatoes, Basil (our name says it), Garlic, Sea Salt.
  • OUR CHEESES - all fresh Mozzarella, low moisture - part skim, imported Parmesan - grated from wheels, imported Feta and imported Goat cheese.
  • FRESH VEGETABLES - We purchase fresh vegetables from Grant Family Farms - Community Supported Agriculture (grantfarms.com)
  • CANNED VEGETABLES - We use only the highest quality.
  • CHICKEN - antibiotic free, marinated in house and roasted to perfection.
  • SAUSAGE - 100% pork, seasoned with Italian spices.
  • PEPPERONI – hot, spicy and patiently aged to peak flavor.
  • GROUND BEEF - 80% lean and seasoned.
  • CLAMS - 100% natural, Fresh or Frozen.
  • CANADIAN BACON - 100% pork shank.
  • SALAD DRESSING - Balsamic Vinaigrette made fresh in our restaurants with Italian Extra Virgin Olive oil, imported Balsamic Vinegar and signature combination of spices.
